Quick Salmon Pate recipe by Gino D'Acampo

You may remember I was raving about this around Christmas time as we served this for our Festive party and on Christmas day.  I recently wanted to make it again for Roz when I went round to try to cheer her up as we both loved it SO much.  It took me ages to find the link because I thought googling it would be quicker than searching my blog for the link (I had it on Pinterest as well but I pin SO much food, that would take a while too!).  After giving up on google, I eventually found the link on my blog only to find that ITV have closed down their food site and removed ALL the recipes!  30 minutes of searching wasted!  I was gutted as I hadn't copied the recipe to my blog but linked to theirs.

The only thing I had to go on was my picture on the blog of the ingredients ready to be whizzed in the food processor.  I just took a guess and figured out the basic ingredients and added bit by bit to get the right consistency.  It's not a difficult recipe by any means and the result was actually very yummy, Lauren can attest to that too as she was about to leave but ended up staying to help us finish it off!

Anyway, when I was baking cupcakes on Sunday night, what should I come across but a print out of the salmon pate recipe!  I must have printed it so I wouldn't have to have my laptop in the kitchen where it's likely to get messy when I'm making lots of things at once!  Yay!  So, without further ado, I shall be sharing it here in case anyone else has been searching for it.  And I will never lose it again!

Quick Salmon Pate by Gino D'Acampo

Ingredients:

400g hot smoked salmon
2 tbsp creme fraiche
1 tbsp horseradish
sea salt & black pepper
zest and juice 1 lemon
1 tbsp chives, chopped
1 tbsp capers


Method:

Blitz all the ingredients apart from the capers and chives into a rough paste and then stir through the capers and chives.  Taste and adjust the seasoning as required.  Serve with crusty bread - we particularly liked it with toasted soda bread.


It is the perfect party recipe - quick and easy but absolutely delicious!

  1. This is a lot like how I make both salmon pate and salmon mousse (but for the later I add gelatin)
