Foodie Friday - Pancakes! (Savoury & sweet recipes)

Although it was all a bit last minute, Nik and I really enjoyed our pancakes on Tuesday.  We decided to have them for main and dessert and had most of the things we needed.  I popped into Lidl on my way home from work (I unfortunately work late on Tuesdays) and picked up some last minute bits to fill them with and we had a lovely evening together making everything.  Nik is the pancake king (along with roasts!) in our home and always uses Delia's recipe.

For the fillings, I had bought a few different kinds of cheese (we'd wanted gruyere but that seemed to be the only kind they didn't have in Lidl) - cheddar, mozzarella, gorgonzola and mascarpone.  Incidentally, the big tub (on offer) of mascarpone from Lidl was the nicest I've ever had.  (I swear this is not a sponsored post although it may sound like it!)

The following recipes are just approximate as it was a case of just throwing stuff together which is sometimes the best way.  The first filling we tried was blue cheese chicken:

Chop a spring onion and cook in a little olive oil in a pan, cut some cooked chicken into strips and add to the pan to heat through.  Add a chunk of gorgonzola or blue cheese of your choice, some salt & pepper and stir until it melts.



The second filling was ham, mozzarella, cheddar and basil with black pepper:

Grate/chop the cheeses into strips, cut the ham into strips and shred the basil.  Add the desired amount of each to the pancake as it cooks.  Fold over the edges and serve hot.

Top tip - place the cheeses on the pancake as soon as you flip it so they have a chance to melt.


And for dessert, Nik had classic lemon & sugar but I made a cherry mascarpone concoction with a little Kirsch:

Again, a bit approximate but I added about 1tbp icing sugar to 3-4 tbsp mascarpone.  Stoned and chopped about 4 handfuls of fresh cherries and added half a capful of Kirsch.  Stir all together and add a dollop to a pancake.  Squeeze over a little cherry juice and serve with extra cherries.



They were all delish!  And certainly a lot more successful than the gingerbread pancakes I made for my birthday in December, despite my gorgeous egg cracking assistant (who refused to smile, it's a very serious business after all!)


Unfortunately the pancakes came out very stodgy despite various thicknesses and temperatures attempted during cooking.  I suspect it had something to do with the treacle?  Although Peppa still enjoyed them...


We did eventually get a smile, despite Auntie Becky's incessant picture taking ;)

Ooh yum! That cherry one looks amazing! Lovely ideas. I might just try one of those savoury ones for breakfast tomorrow!
