Hope you all had a lovely weekend? Bex is still down in Manchester enjoying a long weekend, but I know that many of you will be back to work today, so here's a post about cake to cheer you all up!!
I love bake club for so many reasons, not only is there lots of cake to taste and take home, but I also love trying out new bakes and chatting to the other lovely bakers on the night.
I had been to two previous meetings of Glasgow Bake Club, and both previous bakes had gone well, so I was quite relaxed about this meet. The theme was birthday party / celebration as Glasgow Bake Club was one year old! The meeting was held on a Friday night, so I needed something more simple than last cake I made - a giant pink snowball cake filled with homemade marshmallow fluff! - but I still wanted to make something I'd never made before. I decided that top hats were too simple(!), so I looked through my Pinterest food board for some inspiration and decided on banana loaf as I couldn't quite believe I'd never made one before. With some frosting on top to make it a bit more special.
I was pleased with how it turned out and even added some sugar stars to the top :)
In the excitement of sampling the other wonderful bakes on the night, I realised about an hour in to the meet that I hadn't tried my banana loaf. I went over and cut a slice and discovered ...
...it hadn't cooked properly despite the skewer coming away clean before I removed it from the oven! It was basically raw in the middle and not really edible, although when I went over to warn people not to eat it, people were chatting about it and trying to work out how I got the banana gooey centre into my cake! Haha.

It sometimes finishes cooking in the tray after you take it out of the oven - did you do that?
If not next time you do one try either Sophie Dahl's recipe or the Bourbon and Chocolate one from Cup of Jo (it is AMAZING)
Will definitely give it / another recipe ago, I love banana loaf!
I can confirm that the end slice was perfectly cooked and very delicious. and I'm not keen on bananas.
Still don't think raw cake batter would do that much harm!
