As I mentioned in my Fuego Lounge review, my friend Hemina kept us occupied one weekend when I was feeling very down. On the Saturday she came over to bake with me and the kids, Priya especially had a blast and the scones were so easy to make and tasted amazing! We had them hot for lunch with some truffle salami from Aldi (highly recommended by the way).
Here's the recipe which we adapted from my "Greatest Ever Home Baking" recipe book (affiliate link).
Ingredients:
4 tbsp butter, diced
225 g self-raising flour
1 tsp baking powder
125 g mature cheddar cheese, grated
1 tsp mustard powder
150 ml milk
salt & pepper
We also added approx 50g Parmesan cheese into the mixture and put loads on top to give a golden cheesy crust.
Method:
Lightly grease a baking tray and preheat the oven to 220oC/Gas 7.
Sieve the flour, baking powder and a pinch of salt into a bowl. Rub in the butter with your fingers - the twins loved this bit of course - until the mixture resembles breadcrumbs.
As you can see, it became slightly more chaotic when K joined in and started making a lot more mess on purpose!!
Stir in the grated cheese(s), mustard powder and enough milk to form a soft dough.
Knead the dough very lightly on a flour dusted work surface then flatten out with the palm of your hand into a circle until about 1 inch thick.
Cut the dough into 8 wedges with a knife and brush with a little milk, sprinkle with grated Parmesan and pepper to taste.
Bake for 10-15 minutes until golden brown. Transfer to wire rack to cool slightly before serving warm with butter and/or your choice of accompaniment. I forgot to take any photos of when they came out of the oven as they smelled TOO good and we tucked in immediately!
We found the mustard taste was quite bland so would add more powder next time too and they might be nice with added chopped chives but they were still utterly delicious, I wish we'd made a double batch! Oh and although I obviously took a lot of photos, I did get my hands dirty too! ;)
