Huevos Rancheros - a recipe

We literally JUST made this for brunch (it's another one to tick off the facebook list of foods to try that I've become obsessed with - the last one I ticked off was Steak Tartare!  I'm now on 50 out of 100, lots still to try!) and it was SO good I couldn't wait to share.  Since I've been pretty absent from the blog lately I thought I may as well do a Saturday post, even though most folk won't see it as they're out enjoying their own weekend!


I woke up this morning and decided that since it's the first weekend we've had in a long time with NO other plans that we should make use of it and do some proper cooking just for us!  (Also a good way to practice for any future dinner parties!)  I woke Nik to tell him this before proceeding to bring a selection of random books from our collection to read in bed and choose recipes from.  Love doing this on a Saturday morning!  By the time we chose our recipes we were starving so decided to look up a recipe I've been wanting to try for a while - the Huevos Rancheros!

Ingredients: (serves 2)

1 tin of chopped tomatoes
tiny smidge of crushed garlic
small red pepper, chopped
tsp oregano (ideally use fresh coriander as well but we didn't have any)
1 red chilli, chopped
small diced onion
salt & pepper to taste
olive oil
2 tortillas (we only had huge ones so halved them and had one each)
4 eggs
cheddar cheese

Method:

Saute the onions and garlic in a pan, add the pepper and chilli and cook for another minute or so, then add the tomatoes, herbs and salt and pepper.


Cook for a few minutes and blend to a smoother sauce.


Heat the oil in a large saucepan and fry the tortillas for a few seconds on each side and place on a piece of kitchen roll to drain.  Fry the eggs and reheat the sauce.

To assemble, halve the tortillas and place one half on a plate.  Put one of the eggs on top and spoon some sauce over.



Place the other half of the tortilla on top with another egg and more sauce.  Add some grated cheese and grind over some pepper.



Serve and enjoy!

Followed by Rack of lamb with caponata-stuffed tomatoes and olive oil and roast garlic mash from Sophie Mitchell's Fabulous Food: Sexy Recipes for Healthy Living...


Finishing with Passionfruit Jellies with white chocolate cream and ginger shortbreads!!...


(Also from Sophie's book, there's sadly no picture of the jellies but I will of course take pictures of everything we make!)

Mmm yummy! We quite often make something similar for breakkie, they are lovely. We also have a quiet weekend this weekend and are going to try and make sushi! Xox
